Garfagnana spelt pie

Ingredients for 6 people :

  •      300 gr. spelt
  •      300 gr. puff pastry
  •      250 gr. ricotta cheese
  •      4 eggs
  •      50 g of grated parmesan cheese
  •      20 g of grated pecorino cheese
  •      1 little piece of ham rind
  •      1 stock-cube
  •      Salt and pepper

Preparation: wash the spelt and boil it in water with the stock-cube, the piece of ham rind, salt and pepper. Drain and let it cool. Place the eggs, the ricotta cheese, the grated parmesan and pecorino cheese in a bowl, mix well and add them to the spelt. Roll out the pastry on a baking pan, pour all the mixture inside it and bake in the electric oven at 170° C for about 40 minutes.
